Bright fruity strawberry coconut refresher is a perfect summer drink to quench your thirst with goodness of fresh strawberries, coconut water and chia seeds. It tastes delicious and instantly invigorates the senses with its refreshing vibrant flavour.
This strawberry cooler drink gets ready in just 5 minutes using just 3 to 4 ingredients and is a great option to include in summer pool parties. It is –
- Healthy
- Dairy free
- Kids Friendly
- Has no added sugar / No refined sugar
Ingredients you’ll need-
Strawberries: They are known to be good source of antioxidants and can be used in variety of recipes like jam, jelly, smoothies or dessert. To make this summer cooler, you can use both fresh or frozen variety.
If you are using fresh strawberries, make sure to pick ripe, spotless, bright red ones. The ones with slightly green hue are under-ripe and have sour flavour.
Coconut Water- It is great alternative to sugary soft drinks in summer season as it is full of nutrients and electrolytes. It would be great if you could use fresh coconut water but if it is not available, you can use packaged coconut water also. Make sure you chill it well before making this drink.
To make this drink more nutrient dense, you can even blend the soft white pulp of fresh coconut (also called ‘coconut meat‘ or ‘coconut malai‘) or opt for the packaged variant with real coconut pulp or tender coconut bits.
Chia seeds- I like to add chia seeds in almost all my summer beverages like fresh juices, smoothies, pudding or overnight oats. They should preferably be soaked in liquid for sometime as it gives them a gel like structure, thus making them easily digestible.
Here I have soaked them in coconut water before using in the recipe. If you are short of time, add them straightway in the drink and stir well.
Sweetener : Sometimes if the strawberries are tart or not sweet enough, you may have to add it to counter the tartness. You can use any sweeetner of you choice like sugar syrup, powdered sugar, honey, maple syrup or stevia.
Lemon Juice : If the drink seems too sweet for your liking, add 1-2 tsp of lemon juice as per your liking. Adding sweetener or lemon juice is optional in this drink and is to be added after tasting.
Variations:
Pink Drink: You can make barbie theme pink drink by blending strawberries with coconut milk instead of coconut water. Use sugar or honey / maple syrup as sweetener and 1/4 tsp vanilla extract for flavouring.
Strawberry Lemonade: Add some lemon wedges, lemon juice and fresh mint leaves to give a zesty tangy twist to the drink (like this mango lemonade). Instead of water, you can also use sparkling water (carbonated / soda water).

Ingredients: (For 2 servings)
- Strawberries (fresh / frozen)- 10 to 12 (200 gms or 7 oz)
- Coconut Water (chilled)- (1 + 1/2) cups
- Chia Seeds – 1 tsp
- Honey / Maple Syrup- 1 tsp
- Lemon Juice- 1 tsp (if required)
- Ice Cubes- For serving
- Basil Leaves- For garnishing
Directions:
Step 1: In a small bow, add chia seeds to 1/4 cup coconut water and mix well. Let them soak for 10 minutes (keep in fridge to chill). The seeds will swell up and gain gel like consistency.
Step 2: Chop off the top part of strawberries and add them to a blender jar. Blend to make smooth puree. Keep 2-3 strawberries aside for garnishing.
Step 3: Add remaining chilled coconut water, sugar / honey and blend once again. Taste and adjust sweetener as per. (If you find it too sweet, add some lemon juice).
Step 4: Divide soaked chia seeds in 2 serving glasses along with ice cubes and sliced strawberries. Pour this strawberry coconut drink on them. Garnish with fresh basil leaves and serve chilled.
