Melty creamy brie, sweet-tart apples, vibrant cranberry sauce, encased in a perfectly buttered crispy bread makes for an absolute satisfying & comforting sandwich. It is simple to make, vegetarian and can be made on stovetop or air fryer.
I was seeing so many trending puff pastry or crostini recipes with brie-cranberry or brie-apples, I decided to try and combine all these flavours in a delicious grilled cheese sandwich. Everyone at my home loved its sweet-savory flavour and I am sure you will enjoy it too.
Though there are just 3-4 ingredients in this brie and apple sandwich but it packs a punch of flavour in every bite. Perfect as an easy weekday lunch, brunch, comfort snack, it is also a great recipe to try during holiday season or to finish up small portions of leftover brie or cranberry sauce.
The cranberry brie apple sandwich recipe is:
- Vegetarian
- Easy to make
- Takes less than 15 minutes
- Can be made on stovetop or air fryer (both methods included in post)
Brie Grilled Cheese Ingredients:
Bread: I would suggest using sourdough or artisan style crusty thick bread for making this sandwich as regular bread or sandwich bread slices can turn soggy due to moisture from apples.
Apples: Use any of your favourite apple variety like honey crisp, gala or apples with slight tart flavour like granny smith as the tartness pairs well with brie.
Brie: This creamy pale coloured soft variety of cheese is made from cow’s milk and has a typical rind of white mould (which is edible). You can leave the rind on or remove it (after slicing the brie).
As good quality brie is not easily available in India, my husband got it especially from his Singapore trip. Instead of brie you can even use camembert cheese which has similar flavour profile.
Cranberry Sauce: Use homemade or store-bought cranberry sauce or jam, raspberry or fig jam. All these flavours pairs well with apple.
Butter: Both salted or unsalted butter work fine here. Soften it by leaving on kitchen counter for sometime or microwave it for 10-15 seconds to make it spreadable. Instead of butter, even mayonnaise can be used.

Ingredients:
- Sourdough (or any crusty bread)- 4 slices
- Brie- 4 oz (sliced)
- Cranberry Sauce- 2 to 3 tbsp
- Apples (Honey crisp or Granny smith)- 1 (thinly sliced)
- Butter- 2 to 3 tbsp
Directions:
Step 1: Microwave butter for 10-15 seconds to soften it up. Apply on both bread slices.
Step 2: Take one slice and place it with buttered side facing down. Spread cranberry sauce on it. Then place sliced apple and brie over it. Place the other bread slice on it with butter side up.
Stovetop
Heat a skillet or gridle. Cook this sandwich on medium-low heat till the bread is golden brown & brie is melty. Flip and cook from other side too (If the cheese is not melting, cover the sandwich with a lid for 1-2 minutes).
The sandwich will be hot initially as cheese is hot melting and bubbly, so I would suggest waiting for 1-2 minutes before serving.
Air fryer:
Preheat the air fryer at 200°C (400°F) for 3-4 minutes. Once it is preheated, place the sandwich in air fryer basket.
Air fry for 6 to 7 minutes at 200°C (400°F) till cheese becomes melty gooey and bread turns golden brown in colour.

Storage & Reheating: Though the sandwich tastes best when consumed fresh but if there is any leftover, store it in an airtight container in fridge for upto a day. Reheat in microwave or air fryer.
