Grilled Corn Salad is a delicious, flavour packed, wholesome salad recipe with goodness of fresh corns, avocados & tomatoes. The salad is topped up with refreshing lime vinaigrette which makes it perfect for summer season.

If you are looking for a corn side dish for BBQ, then this salad is a must try. It is so simple to make, an absolute crowd pleaser and great to serve as sides with sandwiches and burgers. To make it more filling, you can also add some black beans or kidney beans and enjoy as a complete meal.
Grilled Corn Salad Ingredients:
Corn on the Cob: I love the flavour of fresh corn in this salad. Their subtle sweet milky taste with slightly charred edges tastes so good. The green peels on corn ears are called husks and need to be peeled (husked) before grilling or cooking. If fresh corns are not available, you can use frozen or canned corns to make this salad.
Avocado: Always use ripe avocado as raw avocado has a bitter taste which can ruin the taste of salad. (For tips on checking the ripeness of avocado, you can check out the guacamole post.)
Tomatoes: Cherry tomatoes taste great in this salad as their bright juicy taste goes with with rustic charred taste of sweet corns. If you are not able to find cherry tomatoes, you can chop the regular ones and use them.
Onion: I like the sharpness and crunch of red onions in this sweet corn salad. However I know people who are averse to using raw onions in salads, so it can be skipped also.
Feta: The salty tangy taste of feta goes so well with corn & vegetables. If you want to make vegan grilled corn salad, then skip adding it.
Lime dressing: This summer salad is instantly elevated with simple homemade vinaigrette made using fresh lime juice, extra virgin olive oil, minced garlic; seasoned with salt, crushed black pepper and ground cumin powder. You can also add some honey or maple syrup if you want but I have not added any here.
Sweet Corn Salad Variations:
Instead of grilled corns you can even use oven roasted corns or boiled corns to make this salad. You can also add other ingredients of your choice like-
Beans: Enhance the protein quotient in the salad by adding black beans or red kidney beans.
Jalapeno: If you like spicy food, then you will surely love the addition of some chopped fresh jalapeño or pickled jalapeños in this salad.
Vegetables: Feel free to add other vegetables to it like coloured bell pepper, spinach, grilled zucchini or herbs like scallions or chives.
Pasta: You can make corn pasta salad by adding a cup of boiled pasta to this recipe.
Seasoning: Spice up the salad by trying other seasonings like red chilli powder, smoked paprika, Indian chaat masala etc.

Ingredients:
- Fresh Corn (husked)- 2 ears
- Avocado- 1
- Cherry Tomatoes- 3/4 cup
- Red Onion (medium)- 1
- Feta (crumbled) – 1/3 cup
- Lime Juice- 2 tbsp
- Olive Oil- 4 tbsp
- Salt – 1/2 tsp (to taste)
- Black Pepper (crushed)- 1/2 tsp (to taste)
- Garlic Cloves (minced)- 2 small
- Cumin Powder- 1/2 tsp
- Fresh Cilantro / Coriander (chopped) – 3 tbsp
(As feta cheese is already salty, add salt accordingly. Skip feta for vegan salad.)
Directions:
Step 1:
You can grill the corns on BBQ, on a grilling pan or on open flame. Here I have grilled them on open flame. Grill them on medium low flame while rotating after every 10 seconds till you start noticing char marks on them.
(If you are using grilling pan, apply some oil or butter on corns and grill them on this pan while rotating every 10-15 seconds. If you are using frozen corn kernels, then add 2 tsp oil on the grilling pan and cook till you notice char marks).
Step 2:
Once the corns cool down a bit, cut the kernels off the cob using a sharp knife. Break the large pieces with your hands. Keep them aside.
Step 3:
Wash and halve the cherry tomatoes. Finely chop the onions. Slice the avocados in half, remove the seed & scoop the pulp from peel using a spoon. Chop it into bite size pieces.
Step 4:
Prepare the salad dressing by adding lime juice, olive oil, minced garlic, salt, black pepper, cumin powder and chopped cilantro in a bowl. Mix well.
Step 5:
Add grilled corn kernels, avocados, tomatoes, red onion, feta in a mixing bowl. Drizzle salad dressing over it and mix gently. Taste and adjust salt, lime juice or seasoning as per your taste.
Serve it immediately or store it in the fridge in an air tight container until you are ready to serve.
